Leonidas had his first day of doggy day care today and is completely exhausted!!! Can't wait to bring him back next week for more play time.

DNA for Leonidas!
So the report is in!
Leonidas is half purebred Boxer, mixed with Icelandic Sheepdog and a small amount of Miniature Bull Terrier. Sure glad he's mostly Boxer, that's what must make him such a great pup!

Frito Pie
We took a drive up to Taos, NM and stopped at a great little joint called Orlandos. I was really craving beans and decided to get the frito pie with chicken and green chili, yum! Once we got home I decided I'd give it a try.... here's my recipe for frito pie with green chili and chicken. Enjoy!
Frito Pie
Ingredients:
- 1 lb chicken, chopped
- 1/4 C. onion, diced
- 1/4 tsp. garlic, diced
- 2 Tbls. olive oil
- 13 oz. Bueno chopped green chili **
- 15 oz. can of beans (I like black but you can use pinto)
- Lettuce, chopped
- 1-2 tomatoes, chopped
- Cheddar, grated
- Fritos Corn Chips
Directions:
- Cook chicken in olive oil with onion and garlic. Once chicken is mostly cooked, add green chili.
- Warm can of beans.
- Place beans onto plate, top with chicken green chili mixture, cheese, lettuce, tomato and frito chips. Serve with warmed flour tortillas.
Finish off dinner with some yummy Trader Joe cookies!!!

Here Comes Trouble!
Introducing... Leonidas!!!
We have a new addition to the family! His name is Leonidas and he just came home today. We weren't intending on getting a third dog for awhile however, on our usual trip to the animal shelter we found a near perfect puppy and couldn't resist!!!
